Is there a way to make a sorted gallery, perhaps within tabview? So you could have a tab, say, of Images A-D, then another E-H, and so on?
Not with the gallery module but you can do this with data forms. Have a look at http://vineyard.wikidot.com/random-images which will show you how to show random images and also images tagged with a specific letter inside tabs. Ther permissions are relaxed so you can see the page source of the image:_template page and the random-images page.

Yes, you can use a css module on a specific gallery page or put the CSS into your main CSS page. The syntax is as follows and you should change the height and width to whatever you need:
