I want a create a collaborative wiki with any user can access to all properties (edit/remove/create), but this content only apply by admin or moderator.

In the _admin page you can change the permissions for anonym visitors , wikidot-users or MEMBERS of your wiki. ( create, edit,remove).
Also the same for your forum.

Thanks for reply. I think I expressed myself wrong. What I want is to make it so that everyone can do all the features (edit/remove/create), but for them to be seen by the public, a filter (middleware) will be done by the administrator or moderator.
Than you should consider "private" categories - open for edit and visible only for the creators themselves and mods & admins.
Admins can change , rename later to public categories if ok.

There's no feature to make edits go through an approval step.
Helmut's suggestion is probably the closest you'll get to it. That is - allowing people to create and edit freely in a private area, and once it's deemed appropriate it is moved into a public (non-editable) area. You could keep a copy in the private area for futher editing, I suppose, but that would need to be managed manually.
